Our Story
A legacy of hospitality
SALT is the next chapter of a family that has welcomed travelers to the table for generations — from Tuscany to Hollywood to the red rocks of Southern Utah.
In Lucca, Italy, Osteria Baralla has been open since 1860: vaulted brick rooms, warm hospitality, and cooking that still sets the standard for how we welcome people to the table.
In Hollywood, our grandfather’s Quo Vadis brought Roman-inspired grandeur to the American dining scene — and his kitchen craft reached living rooms through a television cooking show. That same focus on craft shows up here in every plate that leaves our kitchen.
Another grandfather opened Southern Utah’s parks and jeep tracks to explorers. Desert hospitality under canyon skies is part of who we are — the expedition side of Quo Vadis that still lives downstairs at the Adventure Desk.
That dual inheritance — European table and Western trail — lives above Sandstone Aviation at SGU airport: a steakhouse and whiskey lounge where hospitality means the meal and the company around it.
